Azure Market Organics Unbleached Bread Flour Ultra-Unifine is made from heritage varieties of hard red wheat from our close friends at Jenkins Creek Ranch in Idaho. This heritage wheat has the highest concentration of protein of any flour you can find in the US. At <16 percent, it’s got plenty of gluten to make a light, deliciously crusty loaf every time. It is milled using our Unifine process, and then sifted to remove some of the bran, resulting in a light, white flour. This results in a finished product that has softer flavor notes, rises better and adds a little lightness to your artisan breads. Many commercial bakers who have tried it say Azure’s unbleached flour softens the crust a bit and makes the bread easier to digest. They also blend it with other types of flour to get a truly proprietary, artisan loaf.
The Unifine milling process results in a nutritionally superior flour with a texture that makes it a dream for baking. If all you’ve ever baked with is store-bought, all-purpose flour, you’ll be amazed by the difference in flavor and consistency of our Unifine flours. Azure has one of only three mills in the country that utilize the Unifine milling method.
With the Unifine Milling process, the result is a texture lighter than traditional wheat flour, but with all the benefits of the whole grain and its natural oils. Unifine flours are ideal for fine-textured breads. Note that Unifine flours require a little more liquid than other flours, because the oil molecule remains intact.
Because our Unifine process does not degrade the grain, our Organic Ultra-Unifine Unbleached Bread Flour has better nutritional value than refined flour. Use this flour for more traditional, professional results in your breads.
